The envelope follower thing will work but you have to add offset so it starts from normal volume instead of 0.
I like to use a VCS because you can modulate the "knee"

Sorry to necro this, but I've asked an almost identical question recently, having forgotten I'd asked it before here (albeit in a different context)

I take it by VCS you mean a VC slew limiter/slope gen (like the Doepfer a-171-2) ? Could you unpack the idea a bit more for me?
