There is so much more to summing in a big desk than just transformers on the output, one of the big reasons they sound so clean and open is the amount of headroom they have, something which is severely lacking in eurorack.
As someone who designed one of the best eurorack mixers for getting around the headroom constraints inherent to the format, I would look elsewhere if you want a big desk summing sound. 12V power rails and 5V signal levels are a massive limitation which you can get around if you’re clever with how you gain stage, but you’re starting out at a disadvantage.
To directly answer the question: transformers all colour the sound, that’s why you would choose to use them. I use Radial JDIs in the studio often, was well as the ProD2s, they work well but again you’re using a transformer because you want the colour. A DI won’t give you volume control for your monitors though, you need to patch them to a preamp of some kind so for that you’d most likely be using an external desk or interface.
It sounds like the ideal thing for this situation, depending on if you’re using a DAW, is either a small interface like a Babyface or a monitor controller like a Mackie Big Knob. Or if you want to keep it all in the modular the Instruo Cuir gives you a level control for your monitors and is quite transparent.
