workflow is pretty straightforward, basically clicking the encoder switches to changing velocity, its definitely workable
but its done via one encoder, so its not very hands-on
check the online manual, it details the process well.

Is it possible to to do this on the OG Hermod? I've seen you can pick one up pretty cheap used so I might get one just to experiment before going all in on the Hermod 4+

yes, this is functionally is unchanged, same process as well.
that said, the display on the Hermod+ is MUCH better, a much more pleasant experience to use.
