Do you have a midi controller keyboard? Then you could play with a system in VCV Rack like you would play your modular and then go from there. VCV Rack has modules from Mutable Instruments (called Audible Instruments in VCV), Instruo, Erica Synths, Befaco, Synthesis Technology, Doepfer, Alright Devices and many modules that are inspired by real world modules.
If you like a particular module in VCV, you could search if a real module exists that works similarly or offers similar functionality.

Modulargrid is a good website for planning your rack (it's a database and you can drop modules into a virtual case).

What you'd need is a case with power, midi to cv converter (to get midi from a keyboard into the rack as cv/gate) or a keyboard that has cv/gate outputs.
Then a sound source like a vco, a filter and a vca + envelope would make up a basic substractive synth patch.
Ideally, you have more than one envelope, an lfo and a mixer (to mix different waveforms into the filter). A cv processor that can attenuate, invert and offset control voltage would also be great. Than you'd have a basic, but flexible mono synth voice.
Modular levels are generally much higher than line level gear, so a final mixer module or a vca to turn down the modular level so it can be fed into a normal mixer or your audio interface would be great.
From some modules you can go directly into a desktop mixer or audio interface, but it depends.
You can also start with a semi modular desktop synth and use a modular case to expand it.
